Kate's Eats



Papparadelle with Butternut
Squash and Blue Cheese

Mmm....

Mmm....

Mom left Texas today so I thought I'd make a non-dad dish in honor of Mom who must return to a life without squash, blue cheese, sushi, "stinky" cheese, and pretty much most foods.

We had such a wonderful time and I CAN'T wait for her to come back. There is nothing more comforting than sitting on the patio watching Little O run around, drinking a glass of wine, and talkin it up with my Momma (while monitoring dinner, making sure D doesn't kill himself mowing the lawn, and removing sticks from Little O's mouth).

We're Moms. We multi task.





So start this dish by assembling one amazing looking butternut squash, onions, and some crumbled blue cheese. Also dice 4 cloves garlic, one jalapeno, and assemble paprika, and s&p.




Now peel, dice, and chop one butternut squash.
Don't forget to remove the seeds.
Go take laundry out of dryer and then put them back in cause of a red sock.
Forget that you were making dinner.
Remember that you were making dinner.
Go back to the squash.




Cook up some fresh pasta from the pasta maker bought by your amazing fiance who is currently in the spare, spare bathroom hanging lighting.

If you are lacking any of the above just cook up some yummy pasta of your choice.

Listen to Little O say BuzzWoodyJessieMommyDada a hundred times.





Pause to make peanut butter crackers.



Saute veggies.
Thank goodness for the easy parts since your whites are all pink thanks to that Little O sock.





Add the butternut squash.
Which smells amazing.
Cause it isn't from a grocery store.
Mmmm....




Now serve to a wonderful fiance...
and do dishes...
and eat...

I so LOVE that you include all the multi-tasking involved while cooking your meals. Mine includes three kids homework as well as doing a million and one things for Breanna. I've become very partial to things I can cook in 15 minutes and crock pot recipes. lol
