Kate's Eats


Sausage Stuffed Acorn Squash



Start dinner prep with a glass of wine.
Pick up the dinosaur and the sippy cup from in front of the sink.
Also remove the lego from in the sink.
Oh, also check the oven for hot wheels cars.
Have another glass of wine.


Go to garden and collect:
1) acorn squash
2) thyme, sage, oregano, rosemary
3) 3 small tomatoes
4) two gloves of garlic
5) 1 small onion

Dice them.


Cut squash in half and roast at 450 until soft and it smells yummy.
Be careful to NOT, I repeat, NOT chop off your fingers trying to slice squash in half.
I'm going to assume that others out there are less clumsy than I.
I nearly lost fingers.
All of them.
Close call.



Next simmer sausages.
Cool them or your fingers that you have remaining will no longer have fingerprints.
Dice to desired size.
Eat a couple as a snack.
Make sure small 2yo is not destroying anything.
Take fly swatter from small 2yo.
Drink more wine.



Now go stir the lentils that have been simmering in chicken broth for what you thought would take 15 mintues but ended up taking 30.
Try a bite.
Get a raw garlic clove in your bite.
Eat it anyway because you've had two glasses of wine.
Remove other garlic cloves.
Remove lentils from heat.
Stir again.


Saute onions for 3 minutes.
Add garlic, one diced hot pepper, the tomatoes, and the herbs.
Saute 2 minutes more.
Mmm...smells yummy!




Remove from heat.
Add in 1/4c. grated cheese of your choice.
Next the lentils.
Then the sausage.
Eat a piece of sausage because it's so good.
Mix together.





This is the easiest part.
Stuff the acorn squash with the mixture.




Sprinkle the squash with bread crumbs and cheese.
Heat up the broiler.
Step on a cee-saur on the way to the oven.
Say SHOUT really LOUD several times.
Jump on one foot.




Through the stuffed squash into the broiler.
Don't literally throw in though.
That's messy.
Remove when the bread crumbs and cheese are nice and toasty.
Eat.
Enjoy.

I'm impressed that most of your dinner came from your garden. I miss my garden because I always felt like I was saving so much money using my garden veggies. And I love the pots that you use, they are adorable.

Also, have you tried merguez sausage? I would like to, but I haven't been able to find it around here. I will probably end up making my own.
